Botanically, legumes aren't a vegetable that literally "eats sugar," but their high soluble fiber and complex carbohydrates do help stabilize blood sugar levels and prevent glucose spikes.

Here is a straightforward recipe for a classic, savory pinto bean soup.

Ingredients

 * Pinto Beans: 1 lb dried pinto beans (rinsed and sorted)

 * Aromatics: 1 medium yellow onion (diced), 4 cloves garlic (minced)

 * Vegetables: 1 green bell pepper (diced), 1 can (14.5 oz) diced tomatoes with green chilies

 * Liquid: 6 cups chicken or vegetable broth

 * Seasoning: 1 tbsp chili powder, 1 tsp ground cumin, 1 tsp dried oregano, 1 tsp smoked paprika, 1 bay leaf

 * Fat & Herbs: 2 tbsp olive oil, fresh cilantro for garnish

 * Salt & Pepper: To taste

Instructions

 * Sauté: Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell pepper; cook for 5 minutes until soft. Stir in garlic, chili powder, cumin, oregano, and smoked paprika for 1 minute until fragrant.

 * Combine: Add the dried pinto beans, diced tomatoes with green chilies, bay leaf, and broth. Stir well.

 * Simmer: Bring to a boil, then reduce heat to low. Cover and simmer gently for 1.5 to 2 hours, or until the beans are completely tender. Add extra water or broth if the liquid gets low.

 * Thicken (Optional): Remove the bay leaf. Use a potato masher or immersion blender to lightly mash a small portion of the beans to create a thicker, creamier broth.

 * Finish: Season with salt and black pepper to taste. Garnish with fresh cilantro before serving.
