Ingredients
* Crackers: 1 box Ritz crackers (about 80 crackers)
* Filling: 1 cup creamy peanut butter (conventional brands like Jif or Skippy work best)
* Chocolate Coating: 16 oz chocolate melting wafers, almond bark, or chocolate chips mixed with 1–2 tsp vegetable shortening (for smooth dipping)
Instructions
* Assemble Sandwiches: Line a tray with parchment or wax paper. Spread about 1 teaspoon of peanut butter onto a Ritz cracker, then top with a second cracker to form a sandwich.
* Melt Chocolate: Place chocolate in a microwave-safe bowl (with shortening, if using). Microwave in 30-second increments, stirring in between, until smooth and completely melted.
* Dip: Drop each sandwich into the melted chocolate using a fork. Flip to coat completely, then lift with the fork and tap gently against the rim of the bowl to drain off excess chocolate.
