Air Fryer Croque Monsieur

by

Croque Madame: Top the finished Croque Monsieur with a fried or poached egg for a classic variation. The runny yolk adds an extra layer of richness .

Kimchi Croque Monsieur: Add some chopped kimchi to the filling for a spicy, tangy twist. This works particularly well with a mix of mayonnaise and teriyaki sauce brushed on the bread .

Different Cheeses: While Gruyère is traditional, you can substitute Comté, Emmental, or even a good quality cheddar. Each cheese will bring its own character to the sandwich .

Air Fryer Croque Monsieur

  • Prep Time: 10 minutes

  • Cook Time: 8-10 minutes

  • Total Time: 18-20 minutes

  • Intensity: Easy

  • Serves: 1-2

Ingredients

For the sandwich:

  • 2 slices of good quality white sandwich bread or country bread

  • 2 slices of cooked ham (about 60g)

  • 60g Gruyère cheese, grated (or Comté or Emmental as substitutes)

  • 1 tablespoon unsalted butter, softened

For the béchamel sauce:

  • 15g unsalted butter

  • 15g plain flour

  • 120ml whole milk

  • 1 teaspoon Dijon mustard

  • A pinch of grated nutmeg (optional)

  • Salt and freshly ground black pepper, to taste

Instructions

Step 1: Make the Béchamel Sauce

Melt 15g of butter in a small saucepan over medium heat. Once melted, add the flour and whisk continuously for about 1-2 minutes until the mixture forms a smooth paste and smells slightly nutty. This is called a roux.

Gradually pour in the milk, a little at a time, whisking constantly to prevent lumps from forming. Once all the milk has been added, bring the sauce to a gentle simmer while continuing to whisk. Cook for 2-3 minutes until the sauce has thickened enough to coat the back of a spoon.

Remove the saucepan from the heat and whisk in the Dijon mustard and a pinch of nutmeg if using. Season with salt and pepper to taste. The béchamel should be thick but spreadable. Set it aside to cool slightly while you prepare the other ingredients .

Step 2: Assemble the Sandwich

Butter one side of each bread slice with the softened butter. This helps create a golden, crispy exterior.

Spread a generous layer of the béchamel sauce on the unbuttered side of one slice of bread. Top with a slice of ham, then sprinkle over half of the grated Gruyère cheese. Add the second slice of ham on top of the cheese, then place the second slice of bread on top, with the buttered side facing out.

Spread a thin layer of the remaining béchamel over the top of the sandwich, then sprinkle the rest of the grated cheese over it. This top layer of béchamel and cheese is what gives the Croque Monsieur its characteristic golden, bubbly crust .

Step 3: Air Fry the Sandwich

Preheat your air fryer to 180°C (355°F) for about 3 minutes.

Cut a piece of parchment paper to fit the bottom of your air fryer basket. Place the assembled sandwich on the parchment paper. If your air fryer is small, you may need to cook the sandwich in batches or use a smaller piece of bread.

Air fry the sandwich for 6-8 minutes at 180°C. The exact time will depend on your air fryer model and the thickness of your bread. The sandwich is ready when the cheese on top is melted, golden, and bubbling, and the bread is crispy and toasted .

If the top is browning too quickly but the cheese is not yet fully melted, you can reduce the temperature slightly and cook for a few more minutes. Conversely, if you prefer a deeper golden crust, increase the temperature to 190°C for the final 1-2 minutes.

Step 4: Serve

Carefully remove the Croque Monsieur from the air fryer using a spatula. Let it rest for a minute or two before serving, as the cheese and béchamel will be extremely hot.

Cut the sandwich in half diagonally if desired. Serve immediately with a simple green salad dressed with a light vinaigrette to cut through the richness of the sandwich .

This Mediterranean Chickpea Cucumber Salad has become one of those recipes I make whenever I want something that feels fresh, colorful, and comforting at the same time.

I love that it doesn’t require turning on the oven or spending a long time in the kitchen. Just chop, mix, dress, and let all those flavors come together.

The first time I served it to my family, I expected there to be leftovers for the next day. There weren’t.

Mediterranean Chickpea Cucumber Salad

by

There are some recipes that just make you feel like you’re eating something fresh and wholesome, and this Mediterranean Chickpea Cucumber Salad is definitely one of them. It’s colorful, crunchy, tangy, and surprisingly filling without feeling heavy.

I first made this salad after a friend recommended adding chickpeas to my usual cucumber and tomato salad. I was a little skeptical at first because I thought it might be too simple, but one bite completely changed my mind. I made a big bowl for my family last weekend, and somehow it disappeared much faster than I expected.

Now, this is one of those recipes I make when I want something easy and refreshing. It’s especially nice on warm weekends, but I also find myself making it on busy days when I don’t want to spend much time cooking. Sometimes a big bowl of crisp vegetables, creamy feta, and chickpeas is exactly what I need.

And honestly, the colors alone make me happy. 🥗

Why You’ll Love This Salad

This Mediterranean Chickpea Cucumber Salad is:

Fresh and crunchy

Naturally filling from the chickpeas

Full of colorful vegetables

Easy to prepare

Great for lunch or a light dinner

Perfect for meal prep

Delicious served cold or at room temperature

The combination of juicy tomatoes, crisp cucumber, slightly sharp red onion, salty feta, creamy chickpeas, and fresh herbs is so good together.

The homemade dressing brings everything together with a bright lemony flavor.

IngredientsFor the Salad

2 cans (15 oz each) chickpeas, drained and rinsed

2 medium cucumbers, diced

2 medium tomatoes, diced

1/2 small red onion, thinly sliced

3/4 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

2 tablespoons fresh dill, chopped

1/4 cup Kalamata olives, sliced, optional

For the Dressing

1/4 cup extra-virgin olive oil

2 tablespoons fresh lemon juice

1 tablespoon red wine vinegar

1 small garlic clove, minced

1/2 teaspoon dried oregano

1/4 teaspoon black pepper

1/4 teaspoon salt, or to taste

How to Make Mediterranean Chickpea Cucumber Salad1. Prepare the chickpeas

Drain and rinse the chickpeas thoroughly under cold water.

I like to give them a quick shake in a colander to remove as much excess water as possible. If they’re very wet, the dressing can become diluted.

2. Chop the vegetables

Dice the cucumber and tomatoes into bite-sized pieces.

Thinly slice the red onion. If you find raw onion a little too strong, soak the slices in cold water for about 5–10 minutes, then drain them. It makes the flavor much milder.

3. Combine everything

Add the chickpeas, cucumber, tomatoes, red onion, feta, parsley, and dill to a large mixing bowl.

If you’re using Kalamata olives, add those too.

Already at this point, the bowl looks beautiful. I always seem to take a few extra seconds just admiring all the colors before adding the dressing.

4. Make the dressing

In a small bowl or jar, whisk together the olive oil, lemon juice, red wine vinegar, garlic, oregano, black pepper, and salt.

Give it a taste and adjust the seasoning if needed.

If you like a more lemony salad, add another squeeze of fresh lemon juice.

5. Toss the salad

Pour the dressing over the salad and gently toss everything together.

Be a little careful with the feta so it doesn’t completely disappear into the salad. I love having little creamy pieces scattered throughout.

6. Let it rest

For the best flavor, let the salad sit in the refrigerator for about 15–30 minutes before serving.

This gives the chickpeas and vegetables time to soak up the dressing.

A Little Tip From My Kitchen

If you’re making this salad ahead of time, I recommend keeping the dressing separate and tossing it through just before serving. This keeps the cucumbers especially crisp.

For an even heartier meal, I sometimes add grilled chicken, cooked quinoa, or a little avocado.

What to Serve With It

This salad works beautifully as a side dish, but it’s filling enough to enjoy on its own for lunch.

Try serving it with:

Grilled chicken

Grilled fish

Warm pita bread

Hummus

Falafel

Roasted vegetables

Mediterranean-style rice

For a simple weekend lunch, I love serving it with warm pita and hummus. It’s one of those meals where everyone can help themselves, and there’s very little cleanup afterward.

Can I Make It Ahead?

Absolutely.

The salad can be prepared several hourspea Cucumber Salad has become one of those recipes I make whenever I want something that feels fresh, colorful ahead and kept refrigerated. In fact, I think the flavor gets even better after it has had a little time to sit.

If you’re meal prepping, store it in airtight containers and keep the dressing separate when possible. For the best texture, enjoy it within 3–4 days.
