Flaxseed ground releases its nutrients best, making it an easy add-in for daily meals. Here is a simple, heart-healthy low-carb pudding recipe featuring ground flaxseed and chia seeds.
Heart-Healthy Flax & Chia Pudding
Ingredients
 * 2 tbsp ground flaxseed (flaxseed meal)
 * 2 tbsp chia seeds
 * 1 cup unsweetened almond milk (or coconut milk)
 * 1/2 tsp vanilla extract
 * 1/2 tsp ground cinnamon
 * Liquid stevia or erythritol to taste
 * Optional: A handful of fresh berries or crushed walnuts for serving
Instructions
 * Mix: In a jar or small bowl, combine ground flaxseed, chia seeds, cinnamon, and your choice of low-carb sweetener.
 * Whisk: Pour in the almond milk and vanilla extract. Whisk thoroughly to ensure no seed clumps remain.
 * Set: Let sit for 5 minutes, give it another stir, then cover and refrigerate for at least 2 hours (or overnight) until thick and gelatinous.
 * Serve: Top with a few fresh berries or nuts before serving.
