Pico de Gallo

Step 1: Prep and Drain the Tomatoes

Slice the Roma tomatoes lengthwise into quarters. Use a small spoon or your thumb to scrape out the watery pulp and loose seeds. Finely dice the firm flesh into consistent 1/4-inch cubes.

Pro Tip for Crisp Salsa: Place the diced tomatoes in a colander, toss with 1/4 teaspoon of the salt, and let them drain for 10 minutes. This prevents your Pico de Gallo from turning into a soggy, watery liquid pool in the bowl.

Step 2: Macerate the Onions and Chiles

In a medium glass or ceramic mixing bowl, combine the finely diced white onion, minced jalapeño (or serrano), fresh lime juice, and remaining 1/2 teaspoon of salt. Stir gently and let sit for 5 minutes. The natural acid in the lime juice will slightly tame the raw bite of the onion while drawing out the floral aromatics of the peppers.

Step 3: Combine and Toss

Add the drained, diced tomatoes and the freshly chopped cilantro to the bowl. If using minced garlic or ground cumin, add them now. Using a large spoon or silicone spatula, fold the ingredients together gently to avoid crushing the tomato flesh.

Step 4: The Resting Phase (Flavor Melding)

Cover the bowl and let the salsa rest at room temperature for 15 to 20 minutes (or in the refrigerator for 30 minutes). During this time, the salt and lime juice draw out the juices, fusing the flavors together into a cohesive salsa.

Step 5: Final Seasoning Check

Stir the salsa once more. Taste with an unsalted tortilla chip (or plain spoon) and adjust seasoning as needed: add an extra pinch of salt if flavors taste flat, or an extra squeeze of lime juice for more brightness.

Storage & Freshness

  • Refrigeration: Store in an airtight glass container for up to 3 days. Pico de Gallo is best enjoyed within the first 24 hours while vegetables remain crunchy.

  • Draining Excess Liquid: As it sits, the salsa will naturally release juices. Stir before serving, or use a slotted spoon if serving over tacos or quesadillas to avoid sogginess.

  • Freezing: Do not freeze. Freezing damages the cell walls of raw tomatoes and onions, resulting in a mushy texture upon thawing.
