Ingredients

Seed Foundation

  • 1 cup (approx. 130g) raw, unhulled pumpkin seeds (cleaned and dried)

Liquid Base & Infusions

  • 3 cups (720ml) warm filtered water

  • 1 small cinnamon stick (or ½ tsp ground Ceylon cinnamon)

  • 1 tsp pure vanilla extract

  • ¼ tsp fine sea salt (balances the natural earthiness)

Step-by-Step Preparation

1.Toast the Unhulled Seeds:Develops rich aromatics and breaks down raw bitterness.

Place a dry skillet over medium heat. Add the raw unhulled pumpkin seeds. Toast for 5 to 6 minutes, stirring continuously, until the white shells turn lightly golden, puff slightly, and begin to pop. Remove from heat immediately so they do not scorch.

2.Hot Steep (Optional but Recommended):Softens rigid outer cellulose fibers for higher yield.

Transfer the hot toasted seeds into your blender pitcher. Pour in 1.5 cups of hot (not boiling) filtered water along with the cinnamon stick and pitted dates. Let sit undisturbed for 15 to 20 minutes to soften the outer seed husks.

3.High-Speed Blend:Pulverize the seeds into a creamy emulsion.

Remove the cinnamon stick (or leave it in if using ground cinnamon). Add the remaining 1.5 cups of cold water, vanilla extract, and sea salt. Secure the blender lid and blend on high speed for a full 2 minutes until the white husks are pulverized into fine specks and the liquid turns opaque and milky white.

4.Strain Through a Nut Milk Bag:Mandatory: Removes abrasive woody husk sediment.

Set a nut milk bag or quadruple-layered cheesecloth over a large bowl or pitcher. Pour the blended liquid through the bag. Gather the top and squeeze firmly with clean hands to press out every drop of milk. Discard or compost the dry, fibrous husk pulp left inside the bag.

5.Chill and Store:Serve chilled or warm.

Pour the strained milk into a clean glass mason jar. Serve cold over ice, or warm gently with an extra dash of cinnamon. Store in the refrigerator for up to 4 to 5 days (shake well before pouring, as natural separation occurs).
