Meatloaf, mashed potatoes with gravy
Ingredients:
For the Meatloaf:
1 lb ground beef (you can also use a mix of beef and pork)
1/2 cup breadcrumbs
1/4 cup milk
1 small onion, finely chopped
1 garlic clove, minced
1 egg, beaten
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
For the Gravy:
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup beef broth
Salt and pepper to taste
For the Mashed Potatoes:
4-5 medium potatoes, peeled and quartered
1/4 cup milk
2 tablespoons butter
Salt and pepper to taste
Instructions:
1. Make the Meatloaf:
Preheat your oven to 350°F (175°C).
In a large bowl, combine the breadcrumbs and milk. Let it sit for a few minutes until the breadcrumbs absorb the milk.
Add the ground beef, chopped onion, minced garlic, beaten egg, Worcestershire sauce, dried thyme, dried oregano, salt, and pepper to the breadcrumb mixture.
Mix everything together gently until well combined. Be careful not to overmix, as this can make the meatloaf tough.
Shape the mixture into a loaf shape and place it in a baking dish.
Bake in the preheated oven for 45-55 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
2. Make the Gravy:
While the meatloaf is baking, melt the butter in a saucepan over medium heat.
Stir in the flour and cook for 1-2 minutes until it becomes golden brown and fragrant.
Gradually whisk in the beef broth, ensuring there are no lumps.
Cook the gravy, stirring constantly, until it thickens and reaches your desired consistency. Season with salt and pepper to taste.
3. Make the Mashed Potatoes:
Place the peeled and quartered potatoes in a large pot of salted water.
Bring the water to a boil, then reduce the heat and simmer the potatoes until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot.
Add the milk and butter to the potatoes.
