There are few culinary crossovers as genius or comforting as traditional French onion soup meeting slow-braised beef short ribs
🛒 Ingredients
1. For the Braised Short Ribs & Broth
3 lbs (1.3 kg) bone-in beef short ribs
2 tbsp olive oil or vegetable oil
1 large carrot, chopped
1 large yellow onion, chopped
8 cloves garlic, smashed and peeled
1 tbsp tomato paste
1 cup dry red wine (like a Cabernet Sauvignon or Pinot Noir)
8 cups (1.9 L) high-quality beef stock or broth
4 sprigs fresh thyme
1 bay leaf
Salt and freshly ground black pepper to taste
2. For the Caramelized Onions
6 tbsp (3 oz) unsalted butter
2.5 to 2.75 lbs yellow onions, peeled and thinly sliced (about 4–5 large onions)
1/2 cup dry sherry or extra red wine
3. For the Toasts & Assembly
6 to 8 thick slices of rustic country bread, sourdough, or a French baguette
1 small garlic clove, peeled and halved
1 to 1.5 cups coarsely grated Gruyère cheese (or Swiss/Jarlsberg)
Fresh thyme sprigs and cracked black pepper for garnish

Step 1: Braise the Short Ribs
Preheat your oven to 325°F (165°C).
Season generously: Pat the short ribs dry with paper towels and season all sides liberally with salt and pepper.
Sear: Heat the oil in a large, heavy-bottomed Dutch oven over medium-high heat. Working in batches, brown the short ribs deeply on all sides until nicely caramelized and crusty. Set the ribs aside on a plate.
Build the braising base: Pour off all but about 2 tablespoons of fat from the pot. Add the chopped carrot, chopped onion, and tomato paste. Cook for 4–5 minutes, stirring, until the vegetables and paste begin to brown.
Deglaze: Pour in the red wine, scraping up any delicious browned bits stuck to the bottom of the pot. Let it simmer until reduced to a puddle (about 3 minutes).
Braise: Nestled the short ribs back into the pot along with any resting juices. Toss in the smashed garlic, fresh thyme sprigs, and bay leaf. Pour the beef broth over everything. Cover with a tight-fitting lid and transfer to the oven.
Wait for magic: Braise for 2.5 to 3 hours, or until the meat is completely tender and falling off the bone.
Step 2: Caramelize the Onions
While the ribs are in the oven, melt the butter in a large skillet or separate soup pot over medium heat.
Add the mountain of sliced onions, tossing to coat in the butter, and cover the pot. Let them steam and soften over medium-low heat for about 15 minutes.
Uncover the pot, turn the heat up slightly, and stir in a pinch of salt. Cook, stirring every few minutes, until the onions collapse, turn deeply golden-brown, and become jammy (this takes anywhere from 40 to 60 minutes).
Pour in the dry sherry to deglaze the pan, scraping up all those sweet onion bits, and cook until the liquid evaporates.
Step 3: Combine and Shred
Once the short ribs are done, remove them from the oven and transfer them to a plate to cool slightly.
Discard the bones, excess fat, and any remaining large chunks of gristle. Shred the tender beef into large, satisfying bite-sized pieces.
Strain the braising liquid through a fine-mesh sieve to discard the spent vegetables and herbs (feel free to skim off any excess surface fat).
Combine your strained short-rib broth, the jammy caramelized onions, and the shredded short rib meat into a large pot. Bring to a gentle simmer for 10 to 15 minutes so all the flavors marry together brilliantly. Taste and adjust seasoning with salt and pepper.
Step 4: Broil and Serve
Turn your oven's broiler to high.
Toast your bread slices under the broiler until dry and semi-firm. While still warm, rub one side of each slice lightly with the raw garlic clove.
Ladle the hot short-rib soup into heavy, oven-safe crocks or bowls.
Top each bowl with one or two garlic-rubbed bread toasts.
Cover generously with a mountain of grated Gruyère cheese, making sure it spills slightly over the edges of the bowl.
Broil for 3 to 5 minutes, watching closely, until the cheese is bubbling, melted, and golden-brown with delicious charred spots.
Garnish with a fresh sprig of thyme and cracked black pepper
